Ingredients
  • 1 ½ cups ranulated sugar
  • 1 cup sweet potatoes, mashed
  • ½ cup veggie oil
  • 2 eggs
  • 3 ½ cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt2 cups chocolate chips
Directions
  1. Preheat oven to 350 degrees and grease/line cookie sheet with parchment paper.
  2. Mix sugar, sweet potatoes, veggie oil, and egg until smooth.
  3. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt till combined.
  4. Mix in dry ingredients with wet ingredients until combined.
  5. Fold in half the chocolate chips.
  6. If dough is too warm to form then refrigerate for a few mins.
  7. Use cookie scoop and make balls pressing 2-3 chocolate chips into top.
  8. Place onto baking sheets 2 in apart.
  9. Bake one pan at a time and cook for 10-12 minutes till edges start to brown.
