- 4 cups granulated sugar
- 1 cup vegetable or canola oil
- 1 cup applesauce
- 6 eggs
- 1 (29oz) can pumpkin
- 1 cup water
- 5 ½ cups all-purpose flour
- 3 tsp baking soda
- 3 tsp salt
- 1 ½ tsp baking powder
- 2 ½ tsp pumpkin pie spice
Preheat oven to 350 degrees and line/grease mini muffin pan.
Beat together sugar, oil, applesauce, eggs, and pumpkin, till combined.
In a separate bowl mix flour, baking soda, salt, baking powder, and pumpkin pie spice, till combined.
Mix in dry ingredients and water with wet ingredients by alternating back and forth. Mix till combined.
Add 1 tbsp of batter to each mini muffin cup.
Bake one pan at a time and cook for 13 minutes till cooked thru.
