
Ingredients
- 6 very ripe bananas (skins black)
- 2 cups old fashioned oatmeal
- 2 1/4 cups of boiling water
- 1 1/2 cups canola oil
- 3 1/4 cups sugar
- 6 eggs
- 2 teaspoons vanilla
- 4 cups flour
- 2 teaspoons salt
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 cup applesauce
Directions
Pour the boiling water over the oats and set aside.
Mix the bananas in your mixer
Add oil, sugar, eggs, applesauce and vanilla – mix well
Add the flour, salt, soda and cinnamon
Add the oatmeal.
Pour into a greased and floured pan. Bake at 350.
15×21” pan for 28 to 32 minutes ( 80 squares )
Two 9×13” pans for 35 – 40 minutes ( 40 squares per pan) I cut them 5 across and 8 down.
The squares should be approx. 1 ½ x 2 inches or close to 2×2 inches each.
Cool, cut, wrap well (baggies, saran or foil) and freeze.
Fit into a 2 ½ gallon freezer bag. LABEL and DATE the bag.
