Ingredients
- 4 cups all-purpose flour
- 2 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- 8 medium over-ripe bananas, mashed
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 2 eggs
- ½ cup veggie oil
- 4 tsp vanilla
Directions
- Preheat oven to 350 degrees and line/grease mini muffin pan.
- Mix flour, baking soda, baking powder, and salt until combined.
- In another bowl, mix bananas, sugar, and brown sugar. Beat in eggs, veggie oil, and vanilla.
- Slowly mix in the dry mixture to wet mixture until no lumps remain.
- Fill mini muffin tins ½ full of batter.
- Bake one pan at a time and cook for 13 minutes till cooked thru.
