Ingredients
  • 4 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 8 medium over-ripe bananas, mashed
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 eggs
  • ½ cup veggie oil
  • 4 tsp vanilla
Directions
  1. Preheat oven to 350 degrees and line/grease mini muffin pan.
  2. Mix flour, baking soda, baking powder, and salt until combined.
  3. In another bowl, mix bananas, sugar, and brown sugar. Beat in eggs, veggie oil, and vanilla.
  4. Slowly mix in the dry mixture to wet mixture until no lumps remain.
  5. Fill mini muffin tins ½ full of batter.
  6. Bake one pan at a time and cook for 13 minutes till cooked thru.
